Hola a todos! It has been a while since my last post, hope you all had a lovely summer. Fall in here and the chilly weather in Oslo is making me look into cozy meals with my favorite Peruvian superfoods. That made me notice that from the multiple quinoa recipes I have shared in this blog, there was one missing: a Quinotto, which is a risotto recipe where rice is replaced by my beloved quinoa :-)
It is not common to prepare quinoa this way in Peru. Recently some Peruvian chefs have started experimenting with the idea and many foodies around the world are coming out with their own versions of quinottos.
From all the interesting options out there, I decided to go for the amazing version created by Sylvia Sumitra in her personal blog, superfoodista. This recipe is hands down the most nutritious quinotto I have seen so far, easy to prepare and supercharged of superfoods!
